TURKEY CHILI
Ingredients
- 36 ounces ground turkey
- 1 onion, diced
- 5 garlic cloves, minced
- 1 tablespoon olive oil
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 24 ounces cherry tomatoes
- 11 vine tomatoes, pureed
- 1 ½ cups pico de gallo
- 4 teaspoons chili powder
- ½ teaspoon black pepper
- 1 tablespoon cumin
- 2 bay leaves
- 1 ¾ teaspoon salt
- 2 cups spinach
Method
- In a large saucepan, sauté turkey, onion and garlic in olive oil over medium heat.
- Once onion starts to become translucent, add peppers.
- Sauté for another minute.
- Add tomatoes, pico de gallo and spices.
- Bring to a boil and then reduce heat to a low.
- Add spinach.
- Simmer for 35 minutes. Serve immediately.

- About 7 large servings
