CHICKEN PESTO WITH ZUCCHINI NOODLES
Ingredients
- 1 medium zucchini
- Your serving baked chicken, sliced or cubed
- 1 tablespoon + 1 teaspoon basil
- Your serving of avocado pesto
Method
- Using a spiralizer, create zucchini noodles. Measure out 1 cup worth of “noodles” and place them on a plate.
- Top the zucchini noodles with baked chicken and pesto.
- Mix the ingredients together until the pesto is evenly distributed over the zucchini and chicken.
