  • 36 ounces ground turkey
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 24 ounces cherry tomatoes
  • 11 vine tomatoes, pureed
  • 1 ½ cups pico de gallo
  • 4 teaspoons chili powder
  • ½ teaspoon black pepper
  • 1 tablespoon cumin
  • 2 bay leaves
  • 1 ¾ teaspoon salt
  • 2 cups spinach

Method

    1. In a large saucepan, sauté turkey, onion and garlic in olive oil over medium heat.
    2. Once onion starts to become translucent, add peppers.
    3. Sauté for another minute.
    4. Add tomatoes, pico de gallo and spices.
    5. Bring to a boil and then reduce heat to a low.
    6. Add spinach.
    7. Simmer for 35 minutes. Serve immediately.
